This is one of my Uncle Ben’s favorites 🙂
½ cup shortening (8 tbsp. Crisco)
½ cup sugar
1 ¾ cups sifted enriched flour
3 tsp. baking powder
½ tsp. salt
1 cup milk
2/3 cup blueberries
¼ cup brown sugar, firmly packed
½ tsp. cinnamon
Cream shortening. Add sugar and cream thoroughly. Beat eggs and add. Mix and stir flour, baking powder, and salt. Add alternately with milk to creamed mixture. Fold in blueberries. Turn into a greased 8-inch square pan. Sprinkle with mixture of brown sugar and cinnamon. Bake in moderate oven at 350° for 50 minutes.
